Making Nemuro Strait salmon chazuke

The Nemuro Strait is a treasure trove of seafood due to the benefits of the drift ice that forms there each year. Chazuke is a dish made by pouring green tea, dashi stock or hot water over cooked rice, and can be considered a type of Japanese “fast food”. In this experience you will try some for yourself, with yamazuke (salted salmon) as the main ingredient and stock made from Rausu kelp, scallops, dried salmon and shiitake mushrooms. As you enjoy this delicious dish, you’ll learn about the dashi stock and other umami ingredients that define Japanese cuisine, which is registered by UNESCO as an Intangible Cultural Heritage.
